glittertrash Harvesting: Handful of colour

I went out into the wild wind & rain to harvest this handful of beautiful leaves for breakfast- Vulcan Red + Canary Yellow, plus a few plants that were labeled “Rainbow Chard” which have sprung up in variations of pale pink and orange tones.

Sliced up, stems and all, sauteed in butter with loads of garlic, made a fantastic side to a breakfast of poached eggs & hashbrowns. I love my silverbeet, and my silverbeet is loving the arrival of spring. Throwing off new, big, glossy leaves at a fantastic rate.
