KatPowers Harvesting: Four squashes

I’ve truly enjoyed the butternut squash this year. We only got four fruit, and one was so waterlogged it wasn’t worth bringing in the house, but we did get enough so we can have butternut at American Thanksgiving — even if my inlaws come over.

We’ll be picking up and tossing the vines soon. We only harvested this early because some fruit had been attacked by nasty squash bugs — we brought this inside so it could ripen safely. We’ll cook it up in a few weeks and freeze it.

I love butternut squash and sour cream.
